Mediterranean Salad Mediterranean Salad
A delicious and filling salad. Great to make for lunch.

  • 1 - Red Onion
  • 1 - SuperValu Courgette
  • 250 g SuperValu Fusilli Pasta
  • 1 - SuperValu Lemon juiced
  • 2 tbsp SuperValu Olive Oil
  • 3 - SuperValu Peppers deseeded and sliced
  • 0 - SuperValu Salt to season
  • 200 g SuperValu Semi Sundried Tomatoes


  1. Preheat oven to 180°C/350°F/Gas Mark 4. Cook the pasta as per pack instructions, drain and allow to cool.
  2. Drizzle with some oil.
  3. Place the courgette, onion, sun dried tomatoes and peppers on a baking tray.
  4. Season with salt and pepper.
  5. Drizzle some olive oil over the vegetables and place in the oven for 20 minutes.
  6. Remove from the oven and allow to cool.
  7. Then, in a large salad bowl combine the pasta with the vegetables, squeeze the juice of 1 lemon and season with some black pepper.
