Vegetarian Kebabs Vegetarian Kebabs

Ingredients

  • 16 - Cherry Tomatoes
  • 8 - Mushrooms halved
  • 2 tbsp Olive Oil for tossing
  • 1 - Red Onion cut into chunks
  • 200 g SuperValu Baby Potatoes
  • 2 small SuperValu Courgette cut into chunks
  • 1 tbsp SuperValu Oregano
  • 2 - SuperValu Peppers cut into chunks
  • 0 - SuperValu Salt to season

Method

  1. Preheat the barbecue.
  2. Cook the baby potatoes in a pan with some water until just tender, this will take 8–10 minutes.
  3. Then strain and set aside.
  4. When the potatoes have cooled slightly, cut each in half.
  5. Season with salt and pepper.
  6. Place the sliced vegetables into a bowl and toss with some olive oil and the oregano.
  7. Thread on to eight skewers, then cook for 8–10 minutes, turning occasionally, until lightly charred and tender.
