Strawberry Smoothie Bowl

Ingredients

  • 2 small Banana
  • 1 tsp Chia Seeds
  • 2 tsp Coconut Flakes
  • 4 tbsp Granola , of your choice
  • 6 tbsp Greek Yoghurt
  • 1 pinch Mint Leaves , to decorate
  • 250 g Strawberries , Bord Bia Quality Mark

Method

  1. Cut the stalks off the strawberries and put into a blender, reserving a few for decoration.
  2. Peel the bananas and cut into slices, then add three-quarters into a blender (reserving the rest to decorate).
  3. Add the yoghurt and blitz to a smooth puree and using a spatula put into small serving bowls. Place in the freezer for a few hours at this point to firm up.
  4. Decorate the smoothie bowls with the rest of the banana, reserved strawberries, the coconut flakes and sprinkle over the granola and chia seeds. Decorate with the mint sprigs, if liked to serve.
