“Asparagus is a great air fryer vegetable, it takes just a few minutes to cook and it’s delicious served as a starter with a pesto and crème fraiche dip or an aioli.”
1. Preheat the air fryer to 180˚C.
2. Peel the asparagus if needed and snap to remove any woody stalks.
3. Cut the slices of half lengthways. Wrap half a slice of ham around each spear tightly.
4. In a small bowl, combine the egg, oil, and water until light and frothy.
5. In a second bow, combine the lemon zest and breadcrumb and season with salt and pepper.
6. Dip the asparagus tips in the egg wash bowl and transfer them into the breadcrumb bowl. Toss to coat and create a light layer of breadcrumb. Repeat with all the spears.
7. Place the asparagus in the preheated air fryer and fry for 6-8 minutes until coloured.
8. Remove from the air fryer and serve immediately while warm.
