Caramelised red onions base with goat’s cheese, pesto and cherry tomatoes. For the pizza base you can buy readymade, but if you prefer the recipe for pizza dough is below – alternatively I sometimes use puff pastry, for a quick tasty snack. To make the red onion marmalade:
- Place the onions, brown sugar, red wine and red wine vinegar into a pan and cook over a medium heat for approximately 25 minutes, until the onions have softened and caramelised. Remove from the heat and allow to cool slightly.
To make the pizza:
- Preheat the oven to 180ºC/350ºF/Gas Mark 4.
- Roll out your pizza base, then add a generous layer of the red onion marmalade. Top with tomatoes, goat’s cheese and drizzle with pesto. Place into your preheated oven for 15-20 minutes. Serve immediately once cooked.
