Method
To a bowl, add chickpeas, onion, garlic, parsley, cumin, coriander, chilli, flour and a pinch of salt. Use a hand blender to blend until smooth.
Form into 6 patties.
In a non-stick frying pan heat the oil and then add the patties.
Fry for 3 minutes on each side or until golden brown.
Make your OT side salad by mixing baby spinach, cherry tomatoes and cucumber.
Toast your pitas.
Slice the pittas open and add a spoon of salsa and 3 falafel patties.
Serve the falafel pitta, with the side salad.
