  • 2 medium Eggs , beaten
  • 280 ml Milk
  • 300 ml Vegetable Oil
  • 150 g flour


  1. Preheat the oven to 220˚C. In a large mixing bowl, sieve the plain flour and add in a pinch of salt and pepper.
  2. Whisk the eggs and milk together and pour over the plain flour. Whisk until a smooth batter has been achieved, allow to rest for 10 to 15 minutes.
  3. Fill a 12 cup muffin tray with some vegetable or sunflower oil and place in the oven to preheat for 10 minutes until the oil is sizzling.
  4. Pour the batter in the muffin tray and transfer back to the oven to cook for 15 to 20 minutes until the puddings are well risen and golden brown.
  5. Keep warm until ready to serve.
